Fill a bak\u00ading tray with 1 cm of water and place the pump\u00adkin hal\u00adves cut side down on the tray. Bake the squash for 30 to 40 minu\u00adtes, until the pres\u00adsu\u00adre of a fin\u00adger on the out\u00adside of the squash lea\u00adves a small inden\u00adta\u00adti\u00adon. Remo\u00adve the pump\u00adkin hal\u00adves from the oven. When cool enough to hand\u00adle, scra\u00adpe the insi\u00adde of the squash with a fork to crea\u00adte \u201cspa\u00adghet\u00adti\u201d strands. Now divi\u00adde the pump\u00adkin nood\u00adles bet\u00adween two&nbsp;bowls.<\/p>\n\n\n\n<p>For the \u201cBolo\u00adgne\u00adse\u201d, dice the oni\u00adons and put them in a medi\u00adum-sized pot with 2 tab\u00adles\u00adpoons of water. Fry the oni\u00adons over medi\u00adum heat until they are trans\u00adlu\u00adcent and soft. If neces\u00adsa\u00adry, con\u00adti\u00adnue to add water a tab\u00adles\u00adpoon at a time to pre\u00advent them from bur\u00adning. Add min\u00adced gar\u00adlic, cher\u00adry toma\u00adtoes, min\u00adced mush\u00adrooms, chi\u00adli pow\u00adder, poul\u00adtry sea\u00adso\u00adning, gar\u00adlic pow\u00adder, cur\u00adry pow\u00adder, sea salt, and sun-dried toma\u00adtoes to pot and cook, stir\u00adring fre\u00adquent\u00adly, until toma\u00adtoes are soft, 5 to 7 minu\u00adtes. Using a hand blen\u00adder, puree the sau\u00adce ingre\u00addi\u00adents until com\u00adbi\u00adned but still chun\u00adky. If you use a stand mixer to mix, lea\u00adve the lid slight\u00adly open to allow the hot steam to escape. Spread the sau\u00adce over the spa\u00adghet\u00adti squash.
