Then mash the pota\u00adtoes and pro\u00adcess them with the spi\u00adces and pota\u00adto flour to form a smooth dough ball. Divi\u00adde into three dum\u00adplings. First spread some pota\u00adto flour on the work sur\u00adface and then use the rol\u00adling pin to roll out three round flat&nbsp;cakes.&nbsp;<\/p>\n\n\n\n<p>Fry the flat\u00adbreads one after the other in a coa\u00adted pan wit\u00adhout fat on a low heat for 10 minu\u00adtes until the dough can be easi\u00adly remo\u00adved. Then turn it over and bake the other side for ano\u00adther 5 minu\u00adtes. Keep warm in the&nbsp;oven.&nbsp;<\/p>\n\n\n\n<p>For the fil\u00adling, cut the mush\u00adrooms into sli\u00adces and quar\u00adter the egg\u00adplant leng\u00adthwi\u00adse and then cut into sli\u00adces too. Fine\u00adly chop the oni\u00adon and gar\u00adlic and brief\u00adly fry them in a non-stick pan wit\u00adhout any fat. Then add the egg\u00adplant strips and mush\u00adrooms, sea\u00adson with salt, pep\u00adper and map\u00adle syrup and fry until the liquid has almost evaporated.&nbsp;<\/p>\n\n\n\n<p>Gra\u00adte the car\u00adrot, fine\u00adly sli\u00adce the red or white cab\u00adba\u00adge, chop the toma\u00adtoes and cucum\u00adber and tear the let\u00adtuce. Chop herbs finely.&nbsp;<\/p>\n\n\n\n<p>For the tahi\u00adni dres\u00adsing, puree all the ingre\u00addi\u00adents in a blen\u00adder. The sau\u00adce is more than enough for 3 kebabs, goes well with all salads and can be stored in the fri\u00addge for a week. Cover half of the flat\u00adbreads with the raw vege\u00adta\u00adbles and mush\u00adroom mix\u00adtu\u00adre.
