Cre­a­my mas­hed potatoes

This mas­hed pota­to dish is cre­a­my, fra­grant, and plea­sant­ly light. The rose­ma­ry adds a fine her­bal note, while the lemon pro­vi­des a fresh balan­ce to the who­le thing. 

Ingre­di­ents:

  • 1kg pota­toes
  • approx. 150 ml liquid (e.g., water or oat milk)
  • 1 sprig fresh rose­ma­ry (fine­ly chopped)
  • a litt­le lemon juice (optio­nal)
  • Salt (optio­nal)
  • Pep­per (optio­nal)
  • Papri­ka pow­der (optio­nal, for serving)

Pre­pa­ra­ti­on:

  • Peel pota­toes, cut into small pie­ces, and boil in water until soft for approx. 15–30 minutes. 
  • Drain the water and let the pota­toes steam briefly.
  • Pro­cess into a puree with a pota­to mas­her or fork.
  • Gra­du­al­ly stir in the liquid until the desi­red cre­a­mi­ness is reached.
  • Stir in the rose­ma­ry and optio­nal­ly sea­son with lemon juice, salt, and pepper.
  • Ser­ve with a sprink­le of papri­ka, if desired.
