Creamy mashed potatoes
This mashed potato dish is creamy, fragrant, and pleasantly light. The rosemary adds a fine herbal note, while the lemon provides a fresh balance to the whole thing.
Ingredients:
- 1kg potatoes
- approx. 150 ml liquid (e.g., water or oat milk)
- 1 sprig fresh rosemary (finely chopped)
- a little lemon juice (optional)
- Salt (optional)
- Pepper (optional)
- Paprika powder (optional, for serving)
Preparation:
- Peel potatoes, cut into small pieces, and boil in water until soft for approx. 15–30 minutes.
- Drain the water and let the potatoes steam briefly.
- Process into a puree with a potato masher or fork.
- Gradually stir in the liquid until the desired creaminess is reached.
- Stir in the rosemary and optionally season with lemon juice, salt, and pepper.
- Serve with a sprinkle of paprika, if desired.
