Lem­o­ny pota­to salad with herbs

The small pota­to cubes, the mild oni­ons and lots of fresh herbs make this salad a won­derful com­fort food. 

Ingre­di­ents

  • 5 lar­ge potatoes
  • 2 medi­um red onions
  • 1 tsp salt
  • 2 cloves of garlic
  • 1 handful of fresh pars­ley, fine­ly chopped
  • 1 handful of fresh dill, fine­ly chopped
  • 1 handful of fresh chi­ves, fine­ly chopped
  • Juice of ½ lemon

pre­pa­ra­ti­on

  • Peel the pota­toes, cut them into small cubes, and boil them in ple­nty of water for about 15 minu­tes, until they are ten­der enough. Then drain and let them cool.
  • Fine­ly chop the red oni­ons, mix them with the salt and set them asi­de – this will make them mil­der and lose their spiciness.
  • Fine­ly chop the gar­lic and sau­té it in a litt­le water over high heat for about 5 minu­tes until it takes on a light color and smells wonderful.
  • In a lar­ge bowl, mix the coo­led pota­to cubes with the oni­ons, gar­lic and fresh herbs.
  • Drizz­le the lemon juice over it and mix ever­y­thing carefully.
  • Sea­son to tas­te with addi­tio­nal herbs or a litt­le salt.

Tip

I like to let the salad sit for a few hours befo­re ser­ving, which inten­si­fies its fla­vor. But enjoy­ing it imme­dia­te­ly is also delicious.
