Ingredients
- 5 large potatoes
- 2 medium red onions
- 1 tsp salt
- 2 cloves of garlic
- 1 handful of fresh parsley, finely chopped
- 1 handful of fresh dill, finely chopped
- 1 handful of fresh chives, finely chopped
- Juice of ½ lemon
preparation
- Peel the potatoes, cut them into small cubes, and boil them in plenty of water for about 15 minutes, until they are tender enough. Then drain and let them cool.
- Finely chop the red onions, mix them with the salt and set them aside – this will make them milder and lose their spiciness.
- Finely chop the garlic and sauté it in a little water over high heat for about 5 minutes until it takes on a light color and smells wonderful.
- In a large bowl, mix the cooled potato cubes with the onions, garlic and fresh herbs.
- Drizzle the lemon juice over it and mix everything carefully.
- Season to taste with additional herbs or a little salt.
Tip
I like to let the salad sit for a few hours before serving, which intensifies its flavor. But enjoying it immediately is also delicious.
