Ingre­di­ents for 3 servings: 


Peel and dice the sweet pota­toes. Also wash and dice the pep­pers. Peel and chop the oni­ons and garlic. 

In a pot, sweat the oni­ons and gar­lic with a litt­le water until trans­lu­cent and then add the sweet pota­toes and pep­pers. Now add the toma­to pas­te, fry brief­ly and then add the spices. 

Wash the len­tils and add them to the pot. Imme­dia­te­ly fill with coco­nut milk and vege­ta­ble broth and let the who­le thing sim­mer for 30 minu­tes. It also tas­tes very good the next day.
